Air Fryer Chicken Wings
Shatter-crisp skin with no deep fryer and half a tablespoon of oil.

Air fry chicken wings at 400°F for 20 minutes, flipping halfway, until the skin is deep golden and blistered and the thickest wing reads 165°F. The trick is 1 teaspoon of baking powder (not baking soda) tossed with the dry wings. It helps the skin dry out, blister and crisp like it was deep-fried.
Crispy wings come down to two things: dry skin and moving hot air. Patting the wings dry and tossing them with baking powder pulls moisture from the surface, so the fat renders and the skin crackles instead of steaming. One layer with space between the wings lets the air hit every side. You only need half a tablespoon of oil, and the sauce goes on at the end so the crust stays crunchy.

Tips for the best results
- Use baking powder, not baking soda. Baking soda leaves a bitter, soapy taste. Baking powder just makes the skin crisp.
- Get the wings really dry. Pat them with paper towels until the skin feels tacky, not wet. For even crispier skin, leave them uncovered on a rack in the fridge for a few hours first.
- Give them space. Wings that touch steam each other and come out pale. Cook in batches instead of piling them up.
- Sauce at the end, in a bowl. Sauce in the basket makes the skin soggy and the sugars burn. Toss the hot wings right before serving.
- Don't stop at the first sign of 165°F. Wings are safe there, but they get more tender at 175-185°F and the skin keeps crisping.
Variations
Buffalo wings
Melt 2 tbsp butter into ¼ cup hot sauce and toss with the hot wings. Serve with celery and blue cheese or ranch.
Garlic parmesan wings
Toss the cooked wings with 2 tbsp melted butter, ½ tsp garlic powder and ¼ cup finely grated Parmesan. Finish with chopped parsley.
Lemon pepper wings
Toss the cooked wings with 2 tbsp melted butter and 1-2 tsp lemon pepper seasoning, plus a little fresh lemon zest.
Honey garlic wings
Simmer 2 tbsp honey, 1 tbsp soy sauce and 1 minced garlic clove for 1 minute, then toss with the hot wings.
Storing and reheating
Store cooled wings in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 375°F for 4-6 minutes, until hot all the way through and crisp again. Skip the microwave, which makes the skin rubbery.
Questions
Do I need to preheat the air fryer for chicken wings?
Yes, a 3-minute preheat helps. The wings start sizzling the moment they go in, so the skin crisps instead of slowly steaming. If your air fryer has no preheat button, run it empty at 400°F for 3 minutes.
How long do you cook chicken wings in the air fryer at 400°F?
20 minutes for 1 lb of fresh flats and drumettes, flipping at 10 minutes. Jumbo wings need 22-25 minutes. They're done when the skin is deep golden and blistered and the thickest wing reads 165°F.
Can I cook frozen chicken wings in the air fryer?
Yes. Cook frozen raw wings at 400°F for 25-30 minutes, breaking them apart after about 8 minutes, then season and keep cooking, flipping once. For the crispiest skin, thaw them in the fridge overnight and pat them dry first, because baking powder won't stick to icy wings.
Why are my air fryer wings not crispy?
Usually it's moisture or crowding. Pat the wings very dry, toss them with baking powder, and cook them in one layer with space between them. Add sauce only after cooking.
Do I need oil for air fryer wings?
Only a little. Wing skin has plenty of its own fat, so half a tablespoon for 1 lb is enough to help the seasoning stick and the skin brown evenly. More oil just makes them greasy.
