Air Fryer Tandoori Chicken
Juicy, yogurt-marinated thighs with real charred edges, no tandoor needed.

Marinate boneless chicken thighs in yogurt, lemon, ginger, garlic and tandoori spices for at least 1 hour, then air fry at 400°F for about 18 minutes, flipping at 10, until the thickest pieces read 165°F. Let the extra marinade drip off before cooking. A thin coat chars, while a thick one steams.
A tandoor works because fierce heat chars the outside of yogurt-coated chicken before the inside dries out. A hot air fryer does the same thing on a small scale. Thighs stay juicy at high heat, and the yogurt and lemon marinade tenderizes the meat while the spices cling and blacken at the edges. Kashmiri chili powder gives the classic deep red color with gentle heat.

- 3
Preheat the air fryer to 400°F.

- 4
Let the extra marinade drip off each piece. Lay the chicken in the basket in one layer with gaps between pieces. Cook in batches if needed, keep the waiting raw chicken in the fridge, and throw away any leftover marinade.
- 5
Air fry for about 18 minutes, until the edges are charred. Start checking smaller pieces at 12 minutes.
18 min · Flip the chicken at 10 min
- 6
Check several of the thickest pieces with a thermometer. They need to reach 165°F. Charred edges alone don't mean it's cooked through.
- 7
Rest for 2-3 minutes. Top with red onion, a squeeze of lemon and cilantro, and serve with mint chutney and warm naan.

How to tell it's done

Tips for the best results
- Use Kashmiri chili powder for the color. It gives tandoori chicken its deep red look with mild heat. If you can't find it, use paprika plus a little cayenne. American chili powder is a different blend and tastes different.
- Marinate longer if you can. One hour works, but overnight gives more tender, deeply seasoned chicken. Don't go past 24 hours or the texture can turn soft.
- Shake off the extra marinade. A thin coat chars. Thick, wet marinade drips, smokes and steams the chicken.
- Use thick Greek yogurt. Thin yogurt slides off in the basket. If you only have regular yogurt, strain it in a paper towel-lined sieve for 30 minutes.
- Want more char? Once the chicken has reached 165°F, give it 1-2 more minutes. Thighs stay juicy.
Variations
Tandoori chicken drumsticks
Use 2 lb skinless drumsticks, cut two slashes in each down to the bone, and marinate the same way. Air fry at 400°F for 22-26 minutes, flipping halfway.
Air fryer chicken tikka
Cut the thighs into 1-inch cubes and thread them onto soaked wooden skewers short enough to fit your basket. Air fry at 400°F for 12-14 minutes, turning halfway.
Tandoori chicken breast
Use 1½ lb boneless breast in 1½-inch chunks and cook for 12-15 minutes. Take it out right at 165°F, since breast dries out faster than thighs.
Tandoori chicken wraps
Slice the cooked chicken and roll it in warm naan with red onion, cucumber, cilantro and a spoonful of mint chutney.
Storing and reheating
Store in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 4-5 minutes, until hot all the way through. Leftovers are great sliced into wraps or over rice.
Questions
How long do you cook tandoori chicken in the air fryer?
About 18 minutes at 400°F for boneless thighs, flipping at 10 minutes. Start checking smaller pieces at 12 minutes. Bone-in pieces need 22-26 minutes. It's done when the thickest pieces read 165°F.
How long should I marinate tandoori chicken?
At least 1 hour, and up to overnight in the fridge. The yogurt and lemon tenderize the meat and help the spices stick. Don't go past 24 hours, or the texture can turn soft.
Can I use chicken breast instead of thighs?
Yes. Cut it into 1½-inch chunks and air fry at 400°F for 12-15 minutes, flipping halfway. Breast has less fat, so take it out as soon as it reaches 165°F.
What can I use instead of Kashmiri chili powder?
Use 1½ tsp paprika plus up to ½ tsp cayenne. Paprika gives the red color and cayenne adds the heat. Skip American chili powder, which is a blend with cumin and oregano and tastes different.
Why doesn't my air fryer tandoori chicken have charred edges?
Usually there's too much marinade or the basket is crowded. Let the extra drip off, leave gaps between the pieces, and preheat the air fryer so the chicken starts searing right away. Charred edges alone don't mean it's done, so always check for 165°F.
