Crispy Air Fryer Tofu
Golden, crackly-crisp tofu cubes with one tablespoon of oil and no deep frying.

Air fry 1-inch cubes of pressed extra-firm tofu at 400°F for 14 minutes, shaking halfway, until deep golden and firm. The trick is the coat: toss the cubes in soy sauce and oil, then in cornstarch until no dry patches remain. That thin layer turns into a crisp shell.
Tofu gets crispy when two things happen: water comes out and a thin starch coat goes on. Pressing the block for 20 minutes squeezes out the moisture that would otherwise steam it. Soy sauce seasons the cubes, and cornstarch turns into a light, crackly crust in the hot air. Toss the cubes in sauce after cooking so they stay crunchy.

Tips for the best results
- Press for the full 20 minutes. Extra-firm tofu still holds a lot of water, and water is what keeps it soft.
- Add the cornstarch last. Soy sauce and oil go on first so the starch sticks evenly. Toss until no white patches remain.
- Give each cube space. Touching cubes fuse together and stay pale where they meet. Cook in batches if needed.
- Sauce after, not before. Toss the hot tofu with sauce just before serving so the crust stays crisp.
- For a chewier, meatier bite, freeze the block, thaw it in the fridge, then press. It also soaks up sauce better.
Variations
General Tso's tofu
Warm 1/4 cup General Tso's sauce in a pan until glossy and toss it with the hot tofu. Top with sesame seeds and sliced scallions.
Buffalo tofu
Toss the hot cubes with 3 tbsp buffalo sauce mixed with 1 tbsp melted butter or vegan butter. Serve with celery and ranch.
Salt and pepper tofu
Mix 1/2 tsp black pepper and 1/4 tsp five-spice into the cornstarch. After cooking, toss with sliced chili, scallions and a pinch of salt.
Teriyaki tofu
Toss the crispy cubes with 3 tbsp teriyaki sauce and a sprinkle of sesame seeds. Serve over rice with steamed broccoli.
Storing and reheating
Refrigerate in an airtight container for up to 4 days. Reheat at 400°F for 3-4 minutes, shaking once, to bring back the crunch. Sauced tofu reheats well too, but it won't be as crisp.
Questions
Do you have to press tofu before air frying?
Yes, for crispy tofu. Press extra-firm tofu for 20 minutes between clean towels under a heavy pan. Removing that water lets the outside crisp instead of steam.
Do I need cornstarch for crispy tofu?
It's not essential, but it's what makes the crust crackle. Without it, tofu turns golden and chewy rather than crunchy. Potato starch or arrowroot work the same way, swapped 1:1.
Can I use firm or silken tofu?
Extra-firm gives the best result. Firm tofu works if you press it for about 30 minutes and cook it 2-4 minutes longer. Silken tofu is too soft and falls apart.
Why isn't my air fryer tofu crispy?
The usual causes: the tofu wasn't pressed long enough, the cubes were crowded, or sauce went on before cooking. Press well, spread the cubes out with space around each one, preheat for 3 minutes and add sauce at the end.
How do you keep tofu from sticking to the air fryer basket?
Coat the cubes fully in oil and cornstarch, preheat the basket and shake at the halfway mark. If your basket is worn, brush it with a little oil before adding the tofu.
